Hot from the oven. Your teeth sinking into a crisp on the outside, moist on the inside, savory chocolate cookie. The feel and texture of warm cookie in your mouth and gooey dark chocolate chips melting on your tongue… hey, now you need something to wash it down with!
So you are eating your freshly baked Paleo cookie and suddenly realize now that you have gone full-Paleo, that tall glass of cold cow’s milk is off the menu and merely a distant memory. Soy milk? Nope. Soy beans are legumes. Almond milk? Well, it meets the Paleo requirements except that most store-bought almond milk has a bunch of added sugar. The solution: Make your own Paleo-friendly almond milk. I’ve found a great Paleo milk recipe by Josh at www.PaleolithicNutrition.org. His almond milk recipe is pretty easy to make (check out the embedded video!) and it’s the perfect complement to any Paleo cookie.
